You'll want your plantains to be super ripe.  If you buy them when they are yellow, put them in a paper bag with an apple for a few days until the skins start turning black.  Don't be afraid!  I let mine blacken almost to oblivion-- that's when they are sweetest.  Even a few spots of mold on the outside are ok; you'll find perfect fruit inside.

Heat your oven to 375°F.  Peel the plantains and slice then into pieces an inch or so thick.  Toss them with just enough olive oil to give them a light coating and spread on a baking tray.  Sprinkle with sea salt and place in the middle of the oven for about 40 minutes.  Flip them about halfway through, so they'll be crispy on both sides.   When they are done, they will almost fall apart at the touch.  Enjoy!
